Sun-Dried Tomato Chicken Pasta
Ingredients:
- 8 oz pasta
- 2 chicken breasts, diced
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
It will take about 5 to 6 minutes of cooking after adding the diced chicken breasts until they are golden brown and fully cooked
Put minced garlic in the pan and cook for one to two minutes, until the garlic smells good
Add the sun-dried tomato pieces and stir them in
Cook for two more minutes
Add the heavy cream and dried basil
Mix everything together, then bring it to a simmer
Toss the cooked pasta in the pan with the sauce until it is well covered
Add pepper and salt to taste
Add the grated Parmesan cheese to the pasta and mix it around so that the cheese melts and covers all of the pasta evenly
If you want, you can serve it hot with extra Parmesan cheese and fresh basil on top
