Piri Piri Chicken Skewer with Piri Piri Grilled Corn

Make your barbecue more interesting with these Piri Piri Chicken Skewers and the tasty, charred Piri Piri Grilled Corn. This dish is a hit at any barbecue because of its strong flavors and smokey flavor.

Ingredients:

  • 1
  • 5 lbs boneless, skinless chicken thighs, cut into chunks
  • 1/4 cup Piri Piri sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 ears of corn, husked
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions:

Put olive oil, smoked paprika, salt, and pepper in a bowl and mix in the Piri Piri sauce

Add the chicken chunks to the marinade and make sure each one is well covered

For better flavor, let it sit for at least 30 minutes or overnight

Warm the grill up to a medium-high level

Skewer chicken that has been marinated

For 12 to 15 minutes, turning the chicken skewers every so often, grill them until they are fully cooked and slightly charred

Before you put the corn on the grill, melt some butter and brush it on there

Turn the kernels over every so often for 8 to 10 minutes, or until they are soft and have a little char

Add chopped cilantro to the grilled corn

On the side, put Piri Piri grilled corn and lime wedges with the chicken skewers
