Gluten-Free Power Bowl
There are lots of healthy things in this gluten-free power bowl, like quinoa, chickpeas, and vegetables, which makes it a filling and healthy meal choice. This colorful dish tastes great thanks to the creamy avocado and tangy dressing.
Ingredients:
- 2 cups cooked quinoa
- 1 cup cooked chickpeas
- 1 cup roasted sweet potatoes
- 1 cup steamed broccoli florets
- 1/2 cup sliced avocado
- 1/4 cup shredded carrots
- 2 tbsp hemp seeds
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions:
Cooked quinoa, chickpeas, roasted sweet potatoes, steamed broccoli florets, sliced avocado, and shredded carrots should all be put together in a large bowl
Add honey, salt, pepper, and lemon juice to a small bowl
Use a whisk to mix them all together
Pour the dressing over the ingredients in the power bowl and gently toss to mix
Before you serve, sprinkle hemp seeds on top
