Spaghetti alla Carbonara with Courgettes

Spanish Hookups Brisbane

A twist on the classic Spaghetti alla Carbonara, this recipe incorporates thinly sliced courgettes for added texture and freshness. The creamy sauce made with eggs and pecorino cheese complements the smoky flavor of the bacon perfectly.

Ingredients:

  • 300g spaghetti
  • 200g bacon, diced
  • 2 courgettes, thinly sliced
  • 4 eggs
  • 100g pecorino cheese, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Bring a large pot of salted water to a boil

Cook spaghetti according to package instructions until al dente

Drain and set aside, reserving 1/2 cup of pasta water

In a large skillet, heat olive oil over medium heat

Add diced bacon and cook until crispy, then remove from the skillet and set aside

In the same skillet, add sliced courgettes and cook until tender, about 5 minutes

Remove from heat and set aside

In a bowl, whisk together eggs and grated pecorino cheese

Season with salt and pepper

Add cooked spaghetti to the skillet with courgettes

Pour the egg and cheese mixture over the spaghetti, tossing quickly to coat the pasta evenly

The residual heat will cook the eggs without scrambling them

If the pasta seems too dry, gradually add reserved pasta water until desired consistency is reached

Once the spaghetti is coated and creamy, stir in the crispy bacon

Serve immediately, garnished with additional grated pecorino cheese and freshly ground black pepper, if desired
