Halloumi-Auberginen Burger
Enjoy a Mediterranean-inspired burger with grilled halloumi cheese and smoky aubergine slices. The creamy tzatziki sauce adds a refreshing touch to this delightful burger.
Ingredients:
- 2 halloumi cheese slices
- 1 medium aubergine eggplant, sliced
- 2 burger buns
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 lettuce leaves
- 4 tomato slices
- 4 tablespoons tzatziki sauce
Instructions:
Preheat grill to medium-high heat
Brush aubergine slices with olive oil, sprinkle with smoked paprika, salt, and pepper
Grill aubergine slices for 2-3 minutes per side until tender and grill marks appear
Remove from grill
Grill halloumi cheese slices for 1-2 minutes per side until golden brown and slightly crispy
Toast burger buns on the grill for about 1 minute
Assemble the burgers by placing lettuce leaves on the bottom bun, followed by grilled aubergine, halloumi cheese, tomato slices, and a generous dollop of tzatziki sauce
Top with the other half of the bun and serve immediately
