Mashed Potato Pancakes
These mashed potato pancakes are a delightful way to use leftover mashed potatoes. They are crispy on the outside and creamy on the inside, making them a perfect side dish or snack.
Ingredients:
- 2 cups mashed potatoes
- 1 egg
- 1/4 cup all-purpose flour
- 1/4 cup grated cheese optional
- 2 tablespoons chopped chives optional
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions:
Mash the potatoes, add the egg, flour, grated cheese if using, chopped chives if using, salt, and pepper to a bowl
Mix well until everything is well mixed
Put oil in a pan and heat it over medium-low heat
You can make a pancake out of a spoonful of the potato mix
Put it on the skillet carefully
They should be cooked for three to four minutes on each side, or until they are golden brown and crispy
After the pancakes are done cooking, put them on a plate with paper towels on it to soak up any extra oil
Put it on the table hot and dip it in sour cream, applesauce, or your favorite sauce
