Crock Pot Cheddar Bacon Ranch Potato Soup
A comforting, creamy potato soup that tastes great with ranch, cheddar cheese, and bacon. It is cooked to perfection in a slow cooker.
Ingredients:
- 6 slices bacon, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups diced potatoes
- 4 cups chicken broth
- 1 can 10
- 75 oz condensed cream of chicken soup
- 1 cup water
- 1 packet ranch dressing mix
- 2 cups shredded cheddar cheese
- 1 cup half-and-half
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
In a skillet, cook bacon until crispy
Remove and drain on paper towels
In the same skillet, saut onion and garlic until softened
Transfer cooked bacon, onion, and garlic to a slow cooker
Add diced potatoes, chicken broth, cream of chicken soup, water, and ranch dressing mix to the slow cooker
Stir to combine
Cover and cook on low for 7-8 hours or high for 3-4 hours, until potatoes are tender
During the last 30 minutes of cooking, stir in shredded cheddar cheese and half-and-half
Season with salt and pepper to taste
Serve hot, garnished with chopped green onions
