Dan Dan Noodle Soup
Sichuan-style bold flavors are mixed into this tasty and spicy soup made with tender ground pork, spinach, and noodles.
Ingredients:
- 1 lb ground pork
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tsp ginger, minced
- 2 tbsp Sichuan chili bean paste
- 1 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 1 tbsp sugar
- 1 cup chicken stock
- 2 cups water
- 8 oz dried Chinese wheat noodles
- 2 cups baby spinach leaves
- 2 green onions, thinly sliced
- 2 tbsp roasted peanuts, chopped
- 1 tbsp toasted sesame seeds
Instructions:
Heat vegetable oil in a large pot over medium heat
Add garlic and ginger, cook until fragrant
Add ground pork, cook until browned and crispy
Stir in Sichuan chili bean paste, soy sauce, vinegar, and sugar
Pour in chicken stock and water, bring to a simmer
Meanwhile, cook noodles according to package instructions
Add spinach to the soup, cook until wilted
Divide cooked noodles among bowls
Ladle soup over noodles
Top with green onions, peanuts, and sesame seeds
Serve hot and enjoy
