Pineapple Farro Breakfast Cereal
A tasty and healthy way to start the day is with this Pineapple Farro Breakfast Cereal. Diced pineapple gives it a sweet and sour taste, and farro makes the base. The coconut milk makes this breakfast creamy, and the maple syrup and cinnamon add warmth and depth. Its a healthy and tasty vegan breakfast option that comes with crunchy almonds on top.
Ingredients:
- 1 cup farro
- 2 cups water
- 1 cup diced pineapple
- 1/4 cup coconut milk
- 2 tablespoons maple syrup
- 1/4 teaspoon ground cinnamon
- 1/4 cup chopped almonds
Instructions:
Run cold water over the farro to clean it
Bring 2 cups of water to a boil in a saucepan
Rinse the farro and add it to the boiling water
Then lower the heat and let it cook for 25 to 30 minutes, or until it is soft
Once the farro is done, drain off any extra water
Cook the farro and put it in a separate bowl
Add the diced pineapple, coconut milk, maple syrup, and ground cinnamon
Put the mixture into bowls for serving and sprinkle chopped almonds on top of each one
Enjoy while still warm
