Spiced Swede Cakes
These spiced swede cakes are a tasty vegan take on regular savory cakes. They are a tasty snack or appetizer because they are full of flavor from healthy ingredients and fragrant spices.
Ingredients:
- 1 medium swede, grated
- 1 cup chickpea flour
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- 2 tablespoons olive oil
- 1/4 cup water
- Fresh coriander leaves for garnish
Instructions:
Warm the oven up to 400F 200C
Grate the swede and mix it with the chickpea flour, cumin, coriander, paprika, garlic powder, onion powder, and salt in a large bowl until everything is well mixed
Mix in the water and olive oil, then stir until a thick batter forms
Cut the batter into little chunks and form them into cakes or patties
Line a baking sheet with paper and put the cakes on it
Bake for 25 to 30 minutes, or until the outside is golden and crispy
Add fresh coriander leaves as a garnish before serving
You can eat these spiced swede cakes hot or cold
